Flavorful flecks of vanilla seeds transform an old-fashioned favorite into a modernday indulgence.
Ingredients :
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1/2 vanilla bean
- 2 1/4 cups milk
- 2 egg yolks, beaten
- 1 tablespoon butter
Method :
In a medium saucepan, combine sugar and cornstarch. Split vanilla bean; scrape out the seeds. Add seeds and pod to sugar and cornstarch mixture. Stir in milk. Bring to a boil over medium heat, 7 to 10 minutes, stirring continuously; cook 1 minute more, stirring continuously.
Remove from heat; remove vanilla bean. Gradually stir about 1/2 of the hot mixture into egg yolks; add yolk mixture to the remaining hot mixture, stirring continuously. Bring to a boil. Boil 1 minute, stirring continuously.
Remove from heat. Add butter; stir until butter has melted and mixture is smooth. Divide among 4 dessert cups or custard cups. Cover surface of pudding with plastic wrap and refrigerate at least 1 hour. Makes 4 servings.
